Some mornings just call for muffins for breakfast. Today I woke up wanting something warm from the oven instead of my usual ice cold smoothie. When I bake in the morning, I like my goods sweet but not too sweet. Even though I use only unrefined sugars in my cooking, I still need to be cautious of how much sugar I am putting in my food. I really try to keep my sugar consumption as low as possible.
These muffins were a perfect companion for my morning tea. I love it when ingredients come together to create something totally satisfying without going crazy with added sugar. They were light and fluffy and had just enough sweetness to satisfy my craving thanks to the natural sweetness of the mandarins and the applesauce. They are vegan, whole grain, and require only one bowl. No need for a mixer or food processor here…yay!
In these muffins, I used mandarins because I have been using them in everything lately. They are so sweet and juicy. If you don’t have mandarins, you can substitute regular oranges instead. In less than 30 minutes, using only one bowl, I had these beautiful and golden brown muffins. Simple.
When I was shooting the muffins today, Bronx decided she wanted to play directly under the table. She was so cute and having so much fun, I just could not tell her to stop. So here is a little pet therapy for you guys. So cute!

- 2½ cup spelt flour
- 2 TB coconut sugar
- 2 tsp baking powder
- 1 tsp baking soda
- ¼ tsp sea salt
- 1 tsp ginger
- zest from 3 mandarins
- ½ cup fresh squeezed mandarin juice (about 3 mandarins)
- ¾ cup coconut milk
- ½ cup applesauce
- ⅓ olive oil
- 2 tsp vanilla extract
- 1 TB poppy seed
- Preheat oven to 375 degrees.
- Prepare 12 cup muffin tray with liners or a light coating of oil.
- Whisk together the flour, coconut sugar, baking powder, baking soda, salt, ginger, and mandarin zest.
- Add the mandarin juice, milk, applesauce, olive oil, and vanilla.
- Mix until combined.
- Fold in the poppy seeds.
- Pour or spoon into the muffin cups.
- Bake for 25-28 minutes until a toothpick inserted in the center comes out clean.
