Believe it or not, I was never a fan of V*8 Juice. I love most everything tomato, but for me, V*8 has wayyyyy too much celery! As I mentioned in my juicing post, celery’s flavor is one that I prefer in small doses. The hubbs on the other hand, loves it. Since the original V*8 has questionable ingredients, sodium overload, and there is controversy around whether it is vegan; I wanted to make a good for you version.
Of course, in my juice you will not find “reconstituted vegetable juice” or “natural flavoring” (which could be code for beaver butt secretions). What you will find is 10 delicious organic ingredients (not counting salt): two kinds of tomatoes, a bit of celery, green onions, garlic, red pepper, spinach, cilantro, lemon, carrots, and a dash of cayenne.
Since I was the bartender of this concoction, I decided to use less celery and added cilantro (because I love cilantro). This juice was AMAZING and I am now a convert. This version has now been added into my rotation for a nice change of pace. The hubbs thought it was pretty close to the real thing and said he would love to add some spirits and sip on it Bloody Mary style. I think my photo setup had a lot to do with getting those wheels turning in his head 🙂

- 4 tomatoes on the vine
- handful cherry tomatoes
- 1 celery stalk (use 1 more if you like celery)
- 1 green onion
- 1-2 garlic cloves
- 1 red bell pepper
- 1 handful spinach
- 1 handful cilantro
- ½ lemon, peeled
- 2 carrots
- dash of cayenne
- salt to taste
- Cut all ingredients into pieces that will fit in your juicer.
- Juice away!
- Enjoy immediately or can be stored in the fridge for 48 hourse.
